Creme' Brulee For Anna Banana

6 Egg Yolks
3 oz Granulated Sugar
12 oz Cream
Pinch of salt

1. Heat cream to a scald, and add the sugar after cream scalds
2.Whisk eggs together, avoid adding air.
3. Temper the cream into the eggs, slowly
4. Strain
5. Pour into brulee dishes
6. Bake in a bain marie at 375 (uncovered)

Brulee is done when it jiggles uniformly upon removal from the oven.

7. Sprinkle sugar on the top, then caramelize with a torch, or under the broiler. If using a torch be sure to keep the flame moving.
